Girls Night Dinner

Every month on a Friday night, my 3 girlfriends from my last agency and I get together for a dinner and night of gossip and laughter. We all became fast friends as we sat near each other at work (3 of us sat literally next to each other) and also rode the train together from approximately the same stop all the way into the city. And let me tell you – we had some interesting train rides.

We usually rotate houses/restaurants between the 4 of us. We’ve been doing it for about the past year and a half and it’s always a night we all look forward to. Our nights ALWAYS involve wine…..

This past Friday was my turn and I love any excuse to cook up a meal! Being that Vira is a vegetarian, I have to stretch my mind a bit to come up with a meal that meets everyone needs. I was able to do some prep a night or two in advance which made throwing it all together really easy!

My menu:

Kale and Shaved Brussel Sprout Salad

Roasted Tomato Tart

French Onion Soup

Martha Stewart’s Versatile Vanilla Cake with Dark Chocolate Ganache Icing

Unfortunately, Vira caught a stomach bug so she was unable to attend. Therefore, I quickly switched from vegetable stock for the onion soup, to beef broth for the soup!! Woooohoooooo! Shannon, Smita, and I had a blast and stayed at the table chatting and laughing until midnight!

And last but not least…….this fabulous cake – which will be my go-to cake from now on.

    The Kale salad is a staple in our house now….big bowl will last several days actually and remains very yummy.

    Love to also know what wine you guys were drinking! Always on the lookout for good vino that pares well with food!

      hahahahaa I just picked a random good bottle because I want to enjoy it. Turned out I was the only one drinking this night!
